Industrial Ice Cream is a large-scale production using continuous freezers that, unlike batch freezers, run nonstop, allowing for hundreds of liters per hour. Compared to artisanal ice cream and gelato, it has a higher overrun (60–100%), greater use of stabilizers and emulsifiers. It prioritizes uniformity over ingredient quality, resulting in a lighter, less dense product for mass distribution. Continuous freezers represent a higher investment than artisanal production, best suited for supplying supermarkets and retailers at high volumes.
