šŸø A STRONGER PRODUCT MIX FOR GREATER MARKET VALUE

The global gelato market is estimated at USD 25 billion/year, representing approximately 20% of the total USD 125 billion/year, which includes ice cream and ice pops in all other forms. The projected growth by 2033 is 36%, which would represent sales of USD 34 billion/year.

Of the USD 25 billion/year, approximately half is sold directly in display cases, while the other half is distributed and sold through other channels.

Local production and direct sales through display cases represent the most profitable category among all forms of ice cream and ice pop sales, as they are focused on higher purchasing power customers and are present in more sophisticated commercial centers, without costs such as transportation, distributor margins, etc.

This package is well suited for companies looking to scale their businesses through:

• Factory-only for wholesale distribution
• Factory + retail operation
• Broader frozen dessert portfolios
• Replicable expansion across multiple units
• Franchise growth models or company-owned operations

šŸ“Š ESTIMATED REVENUE POTENTIAL

Illustrative estimate of annual revenue (symbolic currency): 3.24 million coins.

In an example operational scenario of 5 hours of production per day, plus 3 additional hours for preparation and logistics, this package can produce approximately:

• 300 liters of gelato per day
• 6,000 liters per month based on 20 working days

Considering seasonal demand:

• 3 months per year at full production
• 9 months per year at half of that volume

In this scenario, annual production reaches approximately 45,000 liters or 360,000 scoops of 125 ml gelato per year.

Using a reference selling price of 9 symbolic coins per 125 ml scoop, total annual gross revenue would be approximately 3.24 million symbolic coins.

In cases of direct sales through display cases with strong visual appeal and in more sophisticated locations, the selling price may reach 18 symbolic coins, doubling the estimated revenue.

The average production cost per scoop is around 1.20 symbolic coins, depending on the recipe, ingredients, and amount of incorporated air (generally 30%).

Gelato is typically packaged in disposable containers or 5 or 10-liter tubs.

Actual profitability depends on several factors, including labor, rent, equipment depreciation, taxes, logistics, sales structure, and business management.

Reaching the full daily production level of 300 liters is typically a gradual process and depends on commercial development and market expansion.

For entrepreneurs seeking a deeper understanding of operational and commercial success factors, Finamac also offers specialized training and consulting.

šŸ RECOMMENDED MACHINES

ā‘  FINESSE M - Water-cooled

Ultra-sophisticated gelato batch freezer, with disruptive technology and a variety of unique innovations worldwide.

Optionally, the Ice Clean-Water batch freezer can be used, which also produces very high-quality gelato and is a previous generation of the Finesse.

ā‘” Robot Coupe

Small ingredient mixer. Portable and easy to use, it can be easily taken to containers where gelato mixtures are being prepared.

It does not provide homogenization or aeration. For this, we recommend the Flex Mixer 15 (not included in this package). Please consult.

ā‘¢ PP110

The PP110 is a heat treatment machine for milk-based mixtures, designed to reduce harmful microorganisms that may compromise product safety.

Its main advantages include:

• Bottom-mounted motor (no visible motors)
• Strongly inclined tank for mixture discharge
• Sanitary rotating faucet for easy disassembly/cleaning
• Heating system capable of reaching 85°C for high performance

In addition to the heat treatment, it contributes to a creamier, smoother, and more stable final product due to its aeration and homogenization system.

Its hot process operation also improves ingredient absorption and mixing, helping optimize formulations and potentially reduce ingredient consumption.

ā‘£ Flex Freezer Small

Also known as Blast Freezer, it is used for final hardening of gelato before display, as well as for overnight storage, with adjustable temperature, or rapid freezing of other products.

It includes a heating option for melting chocolate for coatings and other purposes.

It is an essential piece of equipment in a gelateria and is available in three sizes: Small, Medium, and Large. Please consult.

⑤ Vista 16

High-tech display case for gelato and ice pops of all types, with capacity for 16 tubs of 5 liters each or ice pop holders.

It features disruptive technology and modular internal construction using special materials, eliminating sharp metal sheets and plywood panels used in conventional display cases.

• Heated double glass
• Highest tub inclination on the global market
• Long-distance product visibility
• Intelligent and precise temperature control

Its design is highly impactful and extremely attractive, significantly increasing sales.

Available for 8, 12, 16, 20, and 24 tubs of 5 liters, meeting all sizes and needs of the high-quality gelateria market. Please consult.

ā‘„ Cooling Tower 10TR

Equipment required to cool the ice cream batch freezer and the heat treatment machine. Must be installed outside the production area.
