Considering a production routine of 5 hours per day, plus 3 additional hours for preparation and logistics, this structure can produce approximately 200 liters of gelato per day, or 4,000 liters per month based on 20 working days.
Considering the seasonality of the business, let us assume:

The PP60 is a heat treatment machine for milk-based mixtures, designed to reduce harmful microorganisms that could compromise product safety.
In addition to the heat treatment, it contributes to a creamier, smoother, and more stable final product, thanks to its aeration and homogenization system. Its hot-process operation also improves the absorption and mixing of important ingredients, helping optimize the formulation and potentially reduce ingredient consumption in gelato production.
⣠Flex Freezer Small
Also known as Blast Freezer, it is used for the final hardening of gelato before it is placed in the display case, as well as for overnight storage, with adjustable temperature, or rapid freezing of other products. It has a heating option for melting chocolate for coating and other purposes. It is an essential piece of equipment in a gelateria, supplied in 3 sizes: Small, Medium, and Large. Please consult.

High-tech display case for gelatos and ice pops of all types, with capacity for 12 tubs of 5 liters each or ice pop holders. It is a product with disruptive technology and modular internal construction made of special material, eliminating sharp metal sheets and plywood panels used in conventional display cases. It has heated double glass and the greatest tub tilt in the global market, allowing product visibility from long distances.
