1. The Emergence and Early Static Tanks (1905 – 1950)
- 1905–1920 | Ice and Salt Molds: Artisanal production began manually. Small producers froze mixes in cylindrical or straight molds submerged in containers filled with crushed ice and coarse salt mixtures (to lower the ice freezing point).
- 1930s–1940s | The Rise of the Brine Tank: With commercial refrigeration compressors, static tank ice pop machines emerged. An insulated metal tank filled with salt water (brine) was cooled by an immersed coil, where operators placed manual molds for slow natural convection freezing.
2. The Agitator and Thermal Fluids Era (1960 – 1980)
- The Arrival of Fluid Agitators: To speed up heat exchange and prevent coarse crystallization, an electric motor with a propeller was added. Constant liquid movement around molds reduced freezing time from hours to about 20–30 minutes.
- Transition from Brine to Glycol: Dissolved salt caused severe corrosion on steel tanks and tinplate/copper molds. The artisanal segment migrated to water mixtures with ethyl alcohol or propylene glycol, preserving machinery and facilitating sanitation.
3. Mold Standardization and Semi-Industrial Automation (1990 – 2010)
In the 90s and 2000s, the artisanal market underwent major professionalization of its small and medium-capacity machinery:
- Commercial Mold Standardization: Small ice pop machines were designed for standardized stainless steel commercial molds (8, 16, 22, or 28 cavity molds) with manual extractors and stick aligners.
- Built-in Defrost Tanks: Artisanal machines integrated a small warm water tank within the compact frame for quick defrosting, releasing ice pops in seconds.
- High-Performance Thermal Fluids: Replacement of home-made mixtures with food-grade synthetic fluids (such as FINAFLUID), reaching temperatures from -30 °C to -40 °C while maintaining ultra-low viscosity and dropping artisanal freezing time below 10–12 minutes.

Modern artisanal producers incorporated industrial-grade automation:
